Open to the public: Yes No BOARD OF CORRECTION IDAPA RULE NUMBER None POLICY STATEMENT It is the policy of the Idaho Board of Correction that the Idaho Department of Correction (IDOC) establish standards and procedures for ensuring that a safe, nutritious diet will be provided to all offenders in a licensed kitchen and that procedures maximizing fiscal accountability are utilized. PURPOSE The purpose of this policy is to communicate the Board’s philosophy in regards to offender food services . SCOPE This policy applies to all procedures created under the authority of this policy and to all employees and contractors of the IDOC who are involved in providing food services . RESPONSIBILITY The director of the IDOC and the chief of the Operations Division are responsible for (1) overseeing the implementation of this policy, and (2) the development and implementation of standard operating procedures (SOPs) that provides guidance and procedure on the following, at a minimum : • Licensing requirements ; • Sanitation; • Nutritional requirements ; • Food menu development; • Forecasting food preparation and services ; • Meal counts ; Control Number: 404 Version: 2.0 Title: Food Service Page Number: 2 of 2 • Food ordering; • Receipting food service supplies ; • Food supply inventories ; • Food cost reporting; • Alternative meal procedures for restrictive housing populations ; • Selective and medical diets ; • Food donations ; and • Food service audits .
