The first is, security staff posted at the entrance door to the dining hall will count the number of inmates entering the dining hall using a click counter. The second is, food service officers will monitor inmates receiving trays/lunches and at the end of each feeding group, they will count the number of trays/lunches remaining on each line and subtract that number from the original number of trays/lunchesstaged. Security staff will notify central control of the number of inmates fed.Food service staff will document the number of inmates fed in the daily “production sheet” for that group. This method will be repeated for each group receiving each meal. References SOP 404.02.01.001, Food Service Management – End of Document –
